Cauliflower Curry 🥦
Tender cauliflower florets in a creamy, mildly spiced sauce with peas, a comfort-food vegetable curry that wins over meat-eaters.
Ingredients (serves 4)
- 1 large head cauliflower
- 1 cup peas
- 1 onion
- 1 cup canned tomatoes
- 3 cloves garlic
- 1 tbsp ginger
- 1 tsp garam masala
- 0.5 tsp turmeric
- 0.25 cup heavy cream
- 2 tbsp olive oil

Chop cauliflower into florets. Heat oil in a large pot over medium-high heat.

Sauté diced onion until golden, about 5 minutes. Add minced garlic and ginger, cook 1 minute.

Stir in garam masala and turmeric, cook 1 minute. Add canned tomatoes with juices.

Add cauliflower florets and 0.5 cup water. Bring to simmer, cover, and cook 15-18 minutes until cauliflower is tender.
