  • 4 chicken breasts
  • 1 onion
  • 4 cloves garlic
  • 1 cup canned tomatoes
  • 1 cup white wine
  • 8 oz mushroom
  • 1 cup olives
  • 1 cup chicken stock
  • 2 tbsp olive oil
  • 1 tsp rosemary
  • salt and pepper

    Heat olive oil in a large pot over medium-high heat. Season chicken with salt and pepper, then brown for 4-5 minutes per side. Remove and set aside.

    Dice onion and sauté in the pot for 3 minutes. Mince garlic and add, cooking for 1 minute.

    Pour in white wine and chicken stock, scraping up browned bits. Add canned tomatoes and rosemary.
