Chicken Quesadillas with Peppers 🌮
Crispy-edged tortillas stuffed with chicken, melted cheese, and sautéed peppers, served with cooling sour cream and salsa.
Ingredients (serves 4)
- 2 cups cooked shredded chicken
- 8 Tortilla
- 2 cups Cheddar Cheese
- 2 Bell Pepper
- 1 Onion
- 1 tbsp Olive Oil
- 1 tsp Cumin
- Salt
- Black Pepper
- Sour Cream
- Salsa

Dice bell peppers and onion into thin strips.

Heat olive oil in a large skillet over medium-high heat. Add peppers and onion, cook until softened and lightly charred, about 5 minutes.

Season peppers and onion with cumin, salt, and pepper. Remove and set aside.

In a bowl, combine cooked chicken with salt and pepper to taste.

Lay a tortilla in the skillet, add 1/4 cup cheese, then chicken, peppers, and more cheese on half of the tortilla.

Fold tortilla in half and cook for 2 minutes until golden and crispy.

Flip and cook another 1 minute until the other side is golden and cheese is melted.

Slide onto a plate and repeat with remaining tortillas. Serve with sour cream and salsa.
