Mushroom and Cheese Frittata 🍄
Tender sautéed mushrooms and melted cheese folded into a fluffy egg skillet, baked until golden for a make-ahead brunch.

- 8 eggs
- 8 oz mushrooms
- 1/2 cup shredded cheddar cheese
- 2 tablespoons butter
- 1/4 onion
- Salt
- Black Pepper
- Fresh thyme

Preheat oven to 375°F. Slice mushrooms and mince onion.

Heat butter in a 10-inch oven-safe skillet over medium-high heat. Add mushrooms and onion, cooking until mushrooms release their liquid and brown, about 6 minutes.

Whisk eggs with salt, pepper, and a pinch of fresh thyme in a bowl.

Pour eggs into the skillet over mushrooms. Sprinkle cheese on top and cook on the stovetop for 2 minutes.
