Mushroom Swiss Melt 🍄
Buttery garlic mushrooms and nutty melted Swiss on crisp griddled sourdough, a meatless melt that eats like a steakhouse classic.
Ingredients (serves 2)
- 8 oz mushrooms
- 4 slices Swiss cheese
- 4 slices sourdough
- 3 tbsp butter
- 2 cloves garlic
- 1 tsp dried thyme
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper

Slice the mushrooms and mince the garlic.

Cook the mushrooms in 1 tbsp butter in a skillet over medium-high heat, undisturbed at first, 6 to 8 minutes until browned. Stir in garlic, thyme, salt, and pepper for the last minute.

Spread Dijon on the bread. Layer Swiss, mushrooms, and more Swiss, then close the sandwiches.
