Ingredients (serves 3)

  • 1 block extra-firm tofu
  • 4 cups fresh spinach
  • 3 cups fresh kale
  • 3 cloves garlic
  • 3 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger
  • Salt and black pepper
  • Sesame seeds

    Press tofu with paper towels for 10 minutes. Cut into 0.75-inch thick slices.

    Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Pan-fry tofu slices for 4 minutes per side until golden and crispy.

    Remove tofu and set aside. Add remaining oil to the skillet.

    Add minced garlic and ginger, cook for 1 minute until fragrant.

    Add spinach and kale, sauté for 5 minutes until wilted.
