Pasta Fagioli 🥣
The hearty Italian-American soup of tender beans, small pasta, and smoky bacon in tomato broth, cozy enough to make twice a week.
Ingredients (serves 6)
- 4 slices bacon
- 1 onion
- 2 carrots
- 2 stalks celery
- 4 cloves garlic
- 1 can crushed tomatoes
- 2 cans white beans
- 4 cups chicken stock
- 1 cup small pasta
- 1 tsp italian seasoning
- 1/2 cup grated parmesan

Chop the bacon and cook it in a large pot over medium heat until crisp, about 6 minutes.

Dice the onion, carrots, and celery, add them to the bacon fat, and cook until softened, about 6 minutes. Stir in the minced garlic and italian seasoning for the last minute.

Add the crushed tomatoes, drained beans, and chicken stock. Bring to a boil, then simmer 15 minutes.

Stir in the pasta and cook at a lively simmer until al dente, about 9 minutes, adding a splash of water if it gets too thick.
