Ingredients (serves 4)

  • 4 large tomatoes
  • 1 cup quinoa, cooked
  • 2 tablespoons olive oil
  • 1/2 red onion
  • 1 red bell pepper
  • 2 cloves garlic
  • 1/4 cup pine nuts
  • 1/4 cup parsley
  • 1 tablespoon lemon juice
  • salt and black pepper to taste

    Preheat oven to 375°F. Cut tops off tomatoes and scoop out insides, leaving 1/4-inch shells. Chop tomato insides and set aside.

    Heat olive oil in a skillet over medium heat. Sauté onion and pepper until softened, 5 minutes. Add garlic and cook 1 minute.

    Mix cooked quinoa, sautéed vegetables, pine nuts, parsley, lemon juice, and chopped tomato insides. Season with salt and pepper.

    Fill tomato shells with quinoa mixture. Place in a baking dish and bake 25 minutes until tomatoes are very soft.
