Rabbit in Mustard Sauce 🍖

Ingredients (serves 4)
- 1 rabbit, 3-4 lbs
- 2 onions
- 2 carrots
- 1 cup red wine
- 1 cup rabbit or chicken stock
- 3 tbsp dijon mustard
- 1 cup heavy cream
- 2 tbsp olive oil
- 1 tsp thyme
- salt and pepper

Heat olive oil in a large pot over medium-high heat. Season rabbit with salt and pepper, then brown pieces in batches, 4-5 minutes per side. Set aside.
