Ingredients (serves 4)

  • 1 lb flank steak
  • 8 oz rice noodles
  • 4 cloves garlic
  • 2 red chili peppers
  • 4 cups beef stock
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon chili flakes
  • scallions and cilantro for garnish

    Slice flank steak very thinly against the grain. Cook noodles according to package directions, drain and set aside.

    Bring beef stock to a boil in a pot with minced garlic, sliced chili, soy sauce, fish sauce, and chili flakes.

    Add sliced beef and simmer for 2 minutes until just cooked through.

    Stir in lime juice. Divide cooked noodles among bowls and ladle broth and beef over top.
