Ingredients (serves 4)

  • 12 lasagna noodles
  • 15 oz ricotta
  • 10 oz frozen spinach
  • 2 cups shredded mozzarella
  • 1/2 cup grated parmesan
  • 1 egg
  • 24 oz marinara sauce
  • 2 cloves garlic
  • 1/2 tsp salt
  • 1/4 tsp nutmeg

    Heat oven to 375°F and boil lasagna noodles until just flexible, about 8 minutes, then lay flat on oiled foil.

    Squeeze thawed spinach very dry and mix with ricotta, egg, minced garlic, half the mozzarella, parmesan, salt, and nutmeg.

    Spread 1 cup marinara in a 9x13 baking dish.

    Spread 3 tbsp filling down each noodle, roll up, and place seam side down in the dish.

    Top with remaining marinara and mozzarella and cover with foil.

    Bake 25 minutes covered, then uncover and bake 10 more until the cheese is bubbling and spotty brown.

    Rest 5 minutes before serving so the rolls hold their shape.
