Split Pea and Ham Soup 🥣
Thick, velvety split peas simmered with smoky ham and vegetables, the old-fashioned pot of soup that warms the whole house.
Ingredients (serves 6)
- 1 lb split peas
- 2 cups diced ham
- 1 onion
- 3 carrots
- 2 stalks celery
- 3 cloves garlic
- 6 cups chicken stock
- 2 bay leaves
- 1 tsp dried thyme
- 2 tbsp olive oil
- salt and black pepper

Rinse the split peas and pick out any debris. Chop the onion, carrots, and celery.

Heat the olive oil in a large pot over medium heat and cook the vegetables until soft, about 6 minutes, then stir in the garlic and thyme for 1 minute.

Add the split peas, ham, stock, and bay leaves and bring to a boil.

Reduce to a low simmer, cover partially, and cook, stirring occasionally, until the peas completely break down, 60 to 70 minutes.

Discard the bay leaves and stir vigorously to make the soup creamy, thinning with water if needed.
