Split Pea Soup with Ham 🍲
Thick, smoky, and deeply savory, split peas simmered down with ham until every spoonful is pure comfort.
Ingredients (serves 6)
- 1 lb green split peas
- 2 tbsp olive oil
- 1 onion
- 3 carrots
- 2 stalks celery
- 3 cloves garlic
- 2 cups diced ham
- 8 cups chicken stock
- 2 bay leaves
- 1 tsp dried thyme

Dice the onion, carrots, and celery. Heat the olive oil in a large pot over medium heat and cook the vegetables until soft, about 6 minutes.

Add minced garlic and thyme and cook 1 minute.

Rinse the split peas and add them with the ham, stock, and bay leaves. Bring to a boil, skimming any foam.

Reduce the heat and simmer uncovered, stirring occasionally, until the peas break down and the soup is thick, 55 to 65 minutes.

Discard the bay leaves. For a smoother texture, mash lightly with the back of a spoon.

Season with black pepper and salt to taste, keeping in mind the ham is salty. Serve with crusty bread.
