Steak with Herb Butter 🥩
A perfectly seared steak crowned with a melting pat of rosemary butter, the simplest bistro bistro dish done right.
Ingredients (serves 2)
- 2 ribeye steaks, 8 oz each
- 4 tbsp butter
- 2 sprigs rosemary
- 2 sprigs thyme
- 3 cloves garlic
- salt
- black pepper

Let steaks sit at room temperature for 15 minutes. Pat dry with paper towels and season generously with salt and pepper.

Heat a cast-iron skillet over medium-high heat until very hot, about 2 minutes.

Sear steaks for 4-5 minutes per side for medium-rare (internal temp 130-135°F). Transfer to a plate to rest.

In the same hot pan, melt 2 tbsp butter with crushed garlic cloves and rosemary and thyme sprigs, cooking for 1 minute.

Top each steak with a tablespoon of herb butter and let rest for 5 minutes. Serve immediately with the pan sauce drizzled over.
