Veggie Burger with Sweet Potato Fries 🍔

Ingredients (serves 3)
- 2 cans black beans
- 0.5 cup panko breadcrumbs
- 1 onion
- 1 clove garlic
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 2 sweet potatoes
- 2 tablespoons olive oil
- 3 burger buns
- Tomato
- Lettuce

Preheat oven to 400°F. Peel and cut sweet potatoes into 0.25-inch fries. Toss with 2 tablespoons olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes, stirring halfway.

Meanwhile, drain and mash beans. Finely dice onion and mince garlic.

Mix mashed beans, panko, onion, garlic, 1 tablespoon olive oil, cumin, salt, and pepper in a bowl.
