Baked Pork Chops and Rice 🍚
Seasoned chops baked right on top of buttery rice that soaks up every drop of flavor, the one-dish dinner grandma had right.
Ingredients (serves 4)
- 4 pork chops
- 1.5 cups rice
- 3 cups chicken stock
- 1 onion
- 8 oz mushrooms
- 2 tbsp butter
- 1 tsp garlic powder
- 1 tsp dried thyme
- salt and black pepper

Heat the oven to 375°F. Season the chops with salt, pepper, garlic powder, and thyme.

Melt the butter in a large oven-safe skillet over medium-high and sear the chops 3 minutes per side. Move to a plate.

Slice the mushrooms and chop the onion, then cook them in the same pan until softened, about 5 minutes.

Stir in the rice and stock, scraping up the browned bits, and bring to a simmer.

Nestle the chops on top, cover tightly with a lid or foil, and bake until the rice is tender and the liquid is absorbed, about 30 minutes.
