Beef and Mushroom Barley Bowl 🍄
Tender beef and earthy mushrooms in a savory broth served over chewy barley for a rustic, hearty meal.
Ingredients (serves 4)
- 1.25 lbs stew beef
- 1.5 cups barley
- 1 lb mushroom
- 1 onion
- 2 carrots
- 3 garlic cloves
- 4 cups beef stock
- 1 bay leaf
- 1 teaspoon thyme
- 2 tablespoons olive oil
- salt
- black pepper

Heat olive oil in a large pot over medium-high heat. Brown stew beef in batches, about 8 minutes total. Set aside.

In the same pot, sauté diced onion and minced garlic until soft, about 2 minutes.

Add quartered mushrooms and diced carrots, cook until mushrooms release their liquid, about 5 minutes.

Return beef to pot, add barley, beef stock, bay leaf, thyme, salt, and pepper. Bring to a boil, reduce heat, cover, and simmer for 30 minutes.
