Beer Battered Fish Fry 🐟
Shatteringly crisp beer battered cod with fries and homemade tartar sauce, the Friday night fish fry without the wait for a table.
Ingredients (serves 4)
- 1.5 lbs cod
- 1.5 cups all-purpose flour
- 1 bottle beer
- 1 tsp baking powder
- 1 tsp paprika
- 4 cups vegetable oil
- 2 lbs frozen fries
- 1/2 cup mayonnaise
- 3 pickles
- 1 lemon
- 1.5 tsp salt

Bake the frozen fries per package at 425°F, about 25 minutes, timing them to finish with the fish.

Stir a quick tartar sauce: mayonnaise, finely chopped pickles, a squeeze of lemon, and a pinch of salt. Chill until serving.

Cut the cod into 8 strips, pat very dry, and season with salt. Heat oil in a Dutch oven to 365°F.

Whisk 1 cup flour, baking powder, paprika, and 1 tsp salt, then whisk in cold beer until the batter is like thin pancake batter. Put remaining flour on a plate.

Dust each piece of fish in flour, dip in batter, and lower carefully into the oil. Fry 4 pieces at a time, 5 minutes, until deep golden and crisp.
