Beer Battered Fish and Chips 🍟
Shatteringly crisp golden batter over flaky cod with hot salty fries, pub night at home.
Ingredients (serves 4)
- 1.5 lb cod
- 1.5 cups all-purpose flour
- 1 cup beer
- 1 tsp baking powder
- 2 lb potatoes
- 4 cups vegetable oil
- 1 tsp salt
- 1 lemon
- 0.5 cup mayonnaise
- 2 tbsp pickles

Cut the potatoes into half-inch fries, rinse in cold water, and pat very dry.

Heat the oil to 325°F in a heavy pot and fry the potatoes 5 minutes until pale and soft, then drain.

Whisk 1 cup flour, the baking powder, salt, and cold beer into a smooth batter.

Cut the cod into 4 pieces, pat dry, and dust with the remaining flour.
