Ingredients (serves 6)

  • 1.5 lb chicken thighs
  • 1 onion
  • 3 cloves garlic
  • 1 can crushed tomatoes
  • 2 cups frozen corn
  • 2 cups frozen mixed vegetables
  • 3 cups chicken stock
  • 1/3 cup BBQ sauce
  • 1 tbsp Worcestershire
  • 1 tsp smoked paprika

    Dice the onion and mince the garlic. Heat 1 tbsp oil in a Dutch oven over medium heat and cook the onion until soft, 5 minutes, then add garlic and smoked paprika for 1 minute.

    Add the chicken thighs, crushed tomatoes, and chicken stock. Bring to a simmer and cook until the chicken reaches 165°F, about 20 minutes.
