Ingredients (serves 4)

  • 1/2 lb ground beef
  • 3 cups cooked rice
  • 2 cups frozen mixed vegetables
  • 3 eggs
  • 3 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 2 cloves garlic
  • 2 scallions

    Heat 1 tbsp oil in a wok or large skillet over high heat. Scramble eggs until cooked through, about 2 minutes. Remove to a plate.

    Add remaining oil. Brown ground beef, breaking it apart, about 6 minutes.

    Add minced garlic and cook 1 minute.

    Add rice and frozen vegetables. Stir-fry 4 minutes over high heat.
