Ingredients (serves 6)

  • 1 lb ground beef
  • 3 potatoes
  • 1 onion
  • 2 carrots
  • 2 celery stalks
  • 4 cups chicken stock
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1/2 cup sour cream

    Brown the ground beef in a large pot over medium-high heat, about 6 minutes, then transfer to a plate and drain the fat.

    Melt the butter in the pot and cook the diced onion, carrots, and celery until soft, about 6 minutes.

    Sprinkle in the flour, stir 1 minute, then whisk in the chicken stock. Add the potatoes cut into 1/2-inch cubes and 1 tsp salt.

    Simmer until the potatoes are tender, about 15 minutes.

    Return the beef, stir in the milk, and warm through without boiling, about 3 minutes.
