Cheesy Bacon Egg Pasta Bake 🍝
Creamy pasta baked with eggs, bacon, and sharp cheddar for a comfort classic that reheats beautifully from meal prep containers.
Ingredients (serves 4)
- 1 lb pasta
- 8 slices bacon
- 6 eggs
- 1.5 cups cheddar cheese
- 1 onion
- 2 tbsp butter
- 1 cup milk
- 2 tbsp all-purpose flour

Preheat oven to 375°F. Cook pasta 2 minutes under al dente, drain and set aside.

Chop bacon and cook in a skillet over medium heat until crispy, about 8 minutes. Remove and drain.

Dice onion. Heat butter in the skillet, cook onion until softened, 3 minutes.

Sprinkle flour over onion, stir and cook 1 minute to form a roux.

Gradually whisk in milk, stirring constantly, until sauce thickens, 3 minutes. Stir in 1 cup cheese, salt, and pepper.

Whisk eggs in a bowl, then temper by slowly pouring egg mixture into cheese sauce while stirring constantly.

Combine pasta, bacon, and cheese sauce in a baking dish. Top with remaining 1/2 cup cheese.
