Ingredients (serves 4)

  • 1 lb ground beef
  • 1 cup rice
  • 1 onion
  • 1 bell pepper
  • 3 cloves garlic
  • 1 can canned tomatoes
  • 2 cups beef stock
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1.5 cups shredded cheddar cheese

    Dice the onion and bell pepper and mince the garlic.

    Brown the ground beef with the onion and pepper in a deep 12-inch skillet over medium-high heat, about 7 minutes, then drain the fat.

    Stir in the garlic, chili powder, paprika, and 1 tsp salt, and cook 1 minute.

    Add the rice, tomatoes with their juice, and beef stock, and bring to a boil.

    Cover, reduce to low, and simmer until the rice is tender and the liquid is absorbed, about 18 minutes. Do not peek early.
