Chicken and Waffles 🧇
Crunchy fried chicken over golden waffles with warm maple syrup, the sweet and salty legend for dinner.
Ingredients (serves 4)
- 4 chicken breasts
- 2 1/4 cups all-purpose flour
- 2 1/2 cups milk
- 3 eggs
- 1 tbsp baking powder
- 2 tbsp sugar
- 4 tbsp butter
- 1 tsp paprika
- 1/2 tsp cayenne
- 1/2 cup maple syrup
- 4 cups vegetable oil

Halve the chicken breasts horizontally into thin cutlets and soak in 1 cup milk with 1 tsp salt while you work.

Whisk 1 1/4 cups flour with paprika, cayenne, 1 tsp salt, and black pepper for the dredge, and heat the oil to 350°F in a Dutch oven.

Dredge the cutlets in the seasoned flour, dip back in the milk, dredge again, and fry 5 to 6 minutes until golden and 165°F inside, then drain on a rack.

Whisk the remaining 1 cup flour with baking powder, sugar, and a pinch of salt, then stir in 1 1/2 cups milk, the eggs, and melted butter until just combined.

Cook the waffles in a hot waffle iron until deep golden and crisp, about 4 minutes each.
