Ingredients (serves 4)

  • 2 lb beef roast (chuck or rump)
  • 3 lb potatoes
  • 6 tablespoons butter
  • 1/2 cup heavy cream
  • 1 onion
  • 2 carrots
  • 2 cloves garlic
  • 2 cups beef stock
  • 2 tablespoons tomato paste
  • 1 tablespoon cornstarch
  • Salt and black pepper to taste

    Pat beef dry and season with salt and pepper. Sear in a hot Dutch oven over high heat for 3 minutes per side until browned.
