Corned Beef Hash 🥘
Diced corned beef and potatoes crisped together in a skillet, topped with a fried egg, the diner classic.

- 8 oz corned beef
- 3 medium potatoes
- 1/2 onion
- 2 tablespoons butter
- 2 eggs
- Salt
- Black Pepper
- Paprika

Dice potatoes into 1/2-inch cubes. Heat 1 tablespoon butter in a large skillet over medium-high heat.

Add diced potatoes and cook, stirring occasionally, until softened and starting to brown, about 8 minutes.

Dice corned beef and onion. Add to potatoes and press the mixture down, cooking without stirring for 4 minutes.

Season with salt, pepper, and a pinch of paprika. Stir and press again, cooking for another 3 minutes.

Make two wells in the hash. Add remaining butter and crack eggs into the wells. Cover and cook until egg whites are set, about 3 minutes.
