  • 6 slices bacon
  • 1 onion
  • 3 eggs
  • 1 cup shredded cheddar cheese
  • Salt
  • Black pepper

    Dice potatoes into 1/2-inch cubes and chop bacon into small pieces.

    Cook bacon in a large skillet over medium-high heat until crispy, about 6 minutes. Remove and set aside, leaving 2 tablespoons fat in pan.

    Add diced potatoes and cook undisturbed for 3 minutes, then stir and continue cooking until golden and tender, about 8 minutes. Don't stir too often; let them brown.

    Add sliced onion and cook until soft and caramelized, about 5 minutes.

    Stir in bacon and cheese. Make 3 wells in the hash and crack an egg into each.
