Ingredients (serves 4)

  • 1 lb tofu
  • 3 cups cooked rice
  • 1 cup peas
  • 1 cup carrots
  • 3 scallions
  • 2 cloves garlic
  • 3 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 eggs
  • Cooking oil
  • Salt and black pepper

    Press tofu between paper towels to remove excess moisture. Cut into 1/2-inch cubes.

    Heat 2 tablespoons oil in a large skillet or wok over high heat. Fry tofu in batches 8 minutes until golden and crispy all over.

    Remove tofu and set aside. Add 1 tablespoon oil to the pan. Scramble eggs quickly, then remove and set aside.

    Add minced garlic and diced carrots. Cook 2 minutes.

    Add rice and peas. Stir-fry 3 minutes. Drizzle with sesame oil, soy sauce, and rice vinegar.

    Return tofu and eggs to the pan. Toss well with sliced scallions and serve hot.
