  • 4 tbsp Butter
  • 1/2 cup Cotija Cheese crumbled
  • 1/4 cup Mayonnaise
  • 2 tbsp Cilantro chopped
  • 1 Lime
  • 1 tsp Chili Powder
  • Salt to taste

    Peel back corn husks but leave attached at base. Remove silk and pull husks back up.

    Soak entire corn in cold water for 30 minutes.

    Heat grill to medium-high. Grill corn, turning every 3-4 minutes for 12 minutes until kernels are tender and lightly charred on all sides.
