Ingredients (serves 4)

  • 12 corn tortillas
  • 3 cups shredded cheddar cheese
  • 1 onion
  • 3 tbsp vegetable oil
  • 3 tbsp all-purpose flour
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 2 cups vegetable stock
