Baked Beef Taquitos 🌯
Crispy rolled tortillas packed with cheesy seasoned beef, baked golden and made for dunking in salsa and sour cream.
Ingredients (serves 4)
- 1 lb ground beef
- 12 corn tortillas
- 2 cups shredded cheddar cheese
- 1 onion
- 2 cloves garlic
- 2 tbsp chili powder
- 1 tsp cumin
- 2 tbsp vegetable oil
- 1 cup salsa
- 1/2 cup sour cream

Heat the oven to 425°F. Dice the onion and brown it with the ground beef in a skillet over medium-high heat, about 7 minutes, then drain the fat.

Stir in the minced garlic, chili powder, cumin, 1 tsp salt, and 1/4 cup water, and simmer 2 minutes. Let cool slightly, then stir in the cheddar.

Warm the tortillas in a damp paper towel in the microwave for 30 seconds so they roll without cracking.

Spoon 3 tbsp filling down each tortilla, roll tightly, and place seam side down on an oiled baking sheet. Brush the tops with the remaining oil.

Bake until golden and crispy at the edges, about 15 minutes.

Cool 5 minutes, then serve with salsa and sour cream for dipping.
