Ingredients (serves 4)

  • 1 lb ground beef
  • 1 onion
  • 1 bell pepper
  • 1 cup rice
  • 1 can black beans
  • 1 cup salsa
  • 2 cups chicken stock
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1.5 cups shredded cheddar cheese

    Dice the onion and bell pepper. Brown the ground beef with them in a deep 12-inch skillet over medium-high heat, about 7 minutes, then drain the fat.

    Stir in chili powder, cumin, rice, drained black beans, salsa, and chicken stock, and bring to a boil.

    Cover, reduce heat to low, and simmer until the rice is tender and the liquid is absorbed, about 18 minutes.

    Scatter the cheddar over the top, cover, and let it melt for 2 minutes off the heat.
