- 4 cloves garlic
- 3 sprigs thyme
- 1 sprig rosemary
- 1 tbsp olive oil

Pat the chops dry and season both sides well with salt and pepper. Let them sit 5 minutes while a 12-inch skillet heats over medium-high.

Add the olive oil and sear the chops without moving them until deeply browned, about 4 minutes.
