Ingredients (serves 4)

  • 1.25 lb chicken breast
  • 3 tablespoons ginger
  • 3 cloves garlic
  • 1 red bell pepper
  • 2 cups broccoli florets
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon palm sugar
  • 1 tablespoon rice vinegar
  • scallions for garnish

    Slice chicken into thin strips. Mince ginger and garlic. Slice bell pepper into strips.

    Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook chicken strips until golden, about 6 minutes. Remove to a plate.

    Add ginger and garlic to the skillet and cook for 20 seconds until fragrant.
