Ginger Pork Stir-Fry 🥢
Tender pork with fresh ginger bite, broccoli and bell peppers, the kind of weeknight dinner that feels like you're eating out.
Ingredients (serves 4)
- 1.5 lb pork tenderloin
- 3 tbsp sesame oil
- 1/3 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp brown sugar
- 3 tbsp ground ginger
- 4 cloves garlic
- 3 cups broccoli
- 1 bell pepper
- 2 scallions

Slice pork tenderloin into 1/4-inch thick slices.

Heat sesame oil in a large skillet or wok over high heat. Add pork in batches and cook until golden, about 3 minutes per side. Remove and set aside.

Add minced garlic and ground ginger to the skillet, cook 30 seconds.

Cut broccoli into florets and chop bell pepper. Add to skillet and stir-fry for 4 minutes.

Whisk together soy sauce, rice vinegar, and brown sugar. Add to skillet with pork.
