Ingredients (serves 4)

  • 1.5 lb chicken breast
  • 2 tbsp gochujang paste
  • 3 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 3 cloves garlic
  • 2 tbsp ground ginger
  • 2 bell peppers
  • 1 onion
  • 2 cups jasmine rice

    Cook jasmine rice according to package directions.

    Cut chicken breast into bite-size chunks and season with salt and black pepper.

    Heat sesame oil in a large skillet or wok over high heat. Add chicken and cook until golden, about 6 minutes. Remove and set aside.

    In the same skillet, add minced garlic and ground ginger, cook 30 seconds.
