Green Chile Cheeseburgers 🍔
A New Mexico legend, juicy beef patties buried under roasted green chiles and gooey melted cheese.
Ingredients (serves 4)
- 1.5 lbs ground beef
- 4 jalapeños
- 4 slices cheddar cheese
- 4 hamburger buns
- 1 onion
- 2 tbsp mayonnaise
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper

Char the jalapeños directly under a broiler, turning, until blistered all over, about 6 minutes. Steam in a covered bowl 5 minutes, then peel, seed, and chop.

Slice the onion. Season the beef with cumin, salt, and pepper, then shape into 4 dimpled patties.

Cook the patties in a hot 12-inch skillet over medium-high heat, 4 minutes on the first side.

Flip, pile the chopped chiles on each patty, top with cheddar, and cook 3 to 4 minutes until melted and the beef hits 160°F.
