Honey Garlic Pork Chops 🥩

Ingredients (serves 4)
- 4 pork chops (1.5 inches thick)
- 1/2 cup honey
- 6 cloves garlic
- 3 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon fresh ginger
- 2 tablespoons olive oil
- 2 cups root vegetables
- 1 tablespoon cornstarch

Preheat oven to 400°F. Toss root vegetables with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.

Pat pork chops dry and season with salt and pepper.

Heat remaining olive oil in a large skillet over medium-high heat. Sear pork chops for 4 minutes per side. Remove and set aside.
