Loaded Hash Skillet Breakfast 🍳
Crispy potato and bacon hash topped with a fried egg and melted cheese, a diner classic that fills you up fast.
Ingredients (serves 4)
- 1 lb Potato
- 8 slices Bacon
- 4 Eggs
- 1 Bell Pepper
- 1/2 cup Cheddar Cheese
- 1 Onion
- Salt
- Black Pepper
- Cayenne

Chop bacon into small pieces and cook in a large skillet over medium-high heat until crispy, about 8 minutes. Remove with slotted spoon, leaving 2 tablespoons fat in pan.

Dice potatoes into 1/2-inch cubes (no need to peel). Add to skillet and cook without stirring for 3 minutes to get crispy.

Stir potatoes and continue cooking 8 minutes more, occasionally stirring, until golden and tender.

Dice onion and bell pepper, add to skillet with cooked bacon. Cook 4 minutes, stirring occasionally.

Season with salt, pepper, and a pinch of cayenne. Create 4 wells in the hash and crack an egg into each.
