Ingredients (serves 4)

  • 1 cup dry lentils
  • 1 cup quinoa
  • 2 medium carrots
  • 2 cups kale
  • 1 red bell pepper
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 2 cloves garlic
  • Salt and black pepper to taste

    Cook lentils in salted water for 25 minutes until tender but not mushy.
