Ingredients (serves 4)

  • 1 lb ground beef
  • 4 sub rolls or baguette
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup grated parmesan
  • 2 cloves garlic
  • 1 jar marinara sauce
  • 2 cups shredded mozzarella
  • 1 tsp italian seasoning
  • 2 tbsp olive oil

    Mix the beef with the breadcrumbs, egg, Parmesan, minced garlic, Italian seasoning, 1 tsp salt, and 1/2 tsp black pepper, then roll into 12 meatballs.

    Brown the meatballs in the olive oil in a large skillet over medium-high heat, about 6 minutes.

    Pour in the marinara, cover, and simmer over low heat until the meatballs are cooked through to 160°F, about 15 minutes.

    Heat the broiler. Split the rolls, lay them on a baking sheet, and toast under the broiler for 1 minute.

    Fill each roll with 3 meatballs and plenty of sauce, top with mozzarella, and broil until melted and bubbly, about 2 minutes. Watch closely.

    Let cool for a minute, then serve with extra sauce for dipping.
