Ingredients (serves 4)

  • 1.25 lb ground chicken
  • 8 oz mushrooms
  • 2 cups shredded carrots
  • 2 cups shredded cabbage
  • 4 scallions
  • 3 cloves garlic
  • 1/4 cup hoisin sauce
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 1 head butter lettuce

    Chop mushrooms finely. Heat 2 tbsp vegetable oil in a large skillet or wok over high heat and cook ground chicken, breaking it up as it browns, about 5 minutes. Remove and set aside.

    Add minced garlic and mushrooms to the skillet and cook for 2 minutes until mushrooms release their liquid.
