Open-Faced Turkey Sandwich 🦃
Warm sliced turkey and creamy mashed potatoes piled on soft bread and drowned in gravy, Thanksgiving comfort any day of the week.
Ingredients (serves 4)
- 1 lb deli turkey
- 4 slices bread
- 2 lbs potatoes
- 1/2 cup milk
- 5 tbsp butter
- 3 tbsp all-purpose flour
- 2.5 cups chicken stock
- 1/2 tsp black pepper
- 1 tsp salt

Peel and quarter the potatoes, cover with cold salted water in a pot, and boil 15 minutes until fork tender.

Meanwhile, melt 3 tbsp butter in a saucepan over medium heat, whisk in flour, and cook 1 minute until pale golden.

Slowly whisk in chicken stock and simmer 5 minutes, whisking often, until the gravy coats a spoon. Season with salt and pepper.

Drain the potatoes and mash with milk, 2 tbsp butter, and a big pinch of salt until smooth.

Warm the turkey slices in the gravy for 2 minutes over low heat.

Lay a slice of bread on each plate, top with mashed potatoes and warm turkey, and ladle gravy generously over everything.
