Ingredients (serves 4)

  • 1 bag tortilla chips
  • 1 lb pork tenderloin
  • 3/4 cup BBQ sauce
  • 2 cups shredded cheddar cheese
  • 1 red onion
  • 1 jalapeño
  • 1/2 cup sour cream
  • 1/4 cup cilantro
  • 1 lime

    Slice the pork tenderloin into 1-inch chunks and simmer covered with 1/2 cup water in a skillet for 15 minutes until tender.

    Shred the pork with two forks, stir in the BBQ sauce, and keep warm over low heat.

    Heat the oven to 400°F and spread the chips on a large sheet pan.
