Ingredients (serves 4)

  • 4 zucchini
  • 1 onion
  • 3 tbsp butter
  • 2 eggs
  • 1/2 cup sour cream
  • 1.5 cups shredded cheddar cheese
  • 1.5 cups crackers
  • 1/2 tsp garlic powder

    Heat oven to 350°F. Slice the zucchini into thin rounds and dice the onion.

    Cook the zucchini and onion in 2 tablespoons of butter over medium heat until soft and most of the liquid evaporates, about 10 minutes. Drain well.

    Stir together the eggs, sour cream, garlic powder, 1 cup of cheddar, 1/2 cup of crushed crackers, and a big pinch of salt and pepper, then fold in the squash.

    Spread into a greased 8x8 dish and top with the remaining cheddar and crushed crackers dotted with the last tablespoon of butter.

    Bake at 350°F until set in the center and golden on top, 25 to 30 minutes.
