Ingredients (serves 6)

  • 1 can kidney beans
  • 1 can black beans
  • 1 can pinto beans
  • 1 onion
  • 1 bell pepper
  • 3 cloves garlic
  • 1 can crushed tomatoes
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 cups vegetable stock
  • 1 cup frozen corn

    Dice the onion and bell pepper and mince the garlic.

    Heat 2 tbsp olive oil in a large pot over medium heat and cook the onion and bell pepper until soft, about 6 minutes.

    Stir in the garlic, chili powder, cumin, and smoked paprika and cook for 1 minute until fragrant.

    Add the crushed tomatoes, all three cans of drained beans, corn, and vegetable stock. Bring to a simmer.

    Simmer uncovered, stirring now and then, until thick and stew-like, about 20 minutes.

    Season with salt and pepper and finish with a squeeze of lime if you have one.
