Ingredients (serves 4)

  • 8 flour tortillas
  • 2 cans black beans
  • 1 cup mozzarella
  • 1 cup cheddar cheese
  • 1/2 cup cotija cheese
  • 2 cups enchilada sauce
  • 1/2 onion
  • 1 cup corn
  • 1 poblano pepper
  • 2 cloves garlic
  • 1 teaspoon cumin
  • Salt and black pepper

    Preheat oven to 375°F. Dice onion and poblano pepper. Drain and rinse black beans.

    Heat 1 tablespoon oil in a skillet over medium heat. Sauté onion, poblano, and minced garlic until soft.

    Stir in black beans, corn, cumin, and 1/2 cup enchilada sauce. Simmer 5 minutes.

    Mix mozzarella and cheddar together. Spread 1/2 cup enchilada sauce on bottom of a baking dish.

    Warm each tortilla and fill with bean mixture and cheese blend. Roll and place seam side down in baking dish.

    Pour remaining enchilada sauce over rolls and top with cotija cheese. Bake 25 minutes until bubbly.
