Turkey Noodle Soup 🦃
The day-after-Thanksgiving tradition, tender turkey and egg noodles in a savory herbed broth you will crave year round.
Ingredients (serves 6)
- 1 lb ground turkey
- 2 tbsp olive oil
- 1 onion
- 3 carrots
- 3 stalks celery
- 3 cloves garlic
- 8 cups chicken stock
- 3 cups egg noodles
- 1 tsp dried thyme
- 1/4 cup parsley

Heat the olive oil in a large pot over medium-high heat. Brown the ground turkey, breaking it up, until no longer pink, about 6 minutes.

Add the diced onion, carrots, and celery and cook until softened, about 5 minutes.

Stir in minced garlic and thyme and cook 1 minute.

Pour in the chicken stock, bring to a boil, and simmer 10 minutes so the flavors come together.

Add the egg noodles and cook until tender, 7 to 8 minutes.
