Vegetable Spring Rolls 🥟
Crispy rice paper rolls filled with fresh vegetables and herbs, garlicky sauce for dipping.
Ingredients (serves 4)
- 16 rice paper wrappers
- 2 cups lettuce
- 1 carrot
- 1 cucumber
- 1 red bell pepper
- 1/2 cup fresh mint
- 1/2 cup cilantro
- 3 cloves garlic
- 3 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon palm sugar

Julienne carrot and bell pepper into thin strips. Slice cucumber into thin sticks. Tear lettuce into bite-sized pieces.

Fill a shallow bowl with warm water. Dip each rice paper wrapper briefly into water to soften, about 10 seconds.

Lay wrapper on a clean surface. Layer lettuce, carrot, cucumber, pepper, mint, and cilantro in the center.

Fold in the sides, then roll tightly away from you until completely sealed.

For the dipping sauce, mix minced garlic with soy sauce, lime juice, and palm sugar. Serve rolls with sauce on the side.
