  • 16 rice paper wrappers
  • 2 cups lettuce
  • 1 carrot
  • 1 cucumber
  • 1 red bell pepper
  • 1/2 cup fresh mint
  • 1/2 cup cilantro
  • 3 cloves garlic
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon palm sugar

    Julienne carrot and bell pepper into thin strips. Slice cucumber into thin sticks. Tear lettuce into bite-sized pieces.

    Fill a shallow bowl with warm water. Dip each rice paper wrapper briefly into water to soften, about 10 seconds.

    Lay wrapper on a clean surface. Layer lettuce, carrot, cucumber, pepper, mint, and cilantro in the center.

    Fold in the sides, then roll tightly away from you until completely sealed.
